FROMAGE DE CHEVRE MARINÉ

Marinated goat's cheese

Ingredients: Serves 4-8

4 small round goat's cheeses - 75 g/2½ oz each (firm but not too dry)
2 bay leaves
2 tsp black peppercorns
2 sprigs fresh thyme
400 ml/¼ pint olive oil, more if needed
few tiny dried hot peppers (optional)

Method:

Place the cheeses in a large jar with the bay, peppercorns, thyme and hot peppers (if using). Add enough olive oil to cover well. Replace the lid and leave for at least 2 weeks before using. They are good for 6-8 weeks, but should not be kept too long as they will soften.

To serve, drain and serve with French bread, or serve as a salad with well-flavoured salad greens such as endive, romaine lettuce and celery and a vinaigrette dressing using oil from the jar.
